축제 기간뿐만 아니라 축제 기간 이후에도 온라인에서 많은 분들과 소통하고자 하는 김치축제의 의지를 담아 특별히 제작한 프로그램으로 많은 관심을 보였다.


진안군이 후원하고 부귀농협이 주최·주관한 이번 축제는 지난 12일부터 3일 동안 온·오프라인에서 동시 진행됐다.

온라인에서는 김치담그기 동영상 올리기, 완제품 김치 인터넷 주문 할인판매, 오프라인에서는 절임배추, 양념, 완제품 김치

등에 대한 ‘드라이브 스루’ 할인판매 행사가 열렸다.


또한 주변의 어려운 이웃과 김치를 나눴다는 시민, 항상 김치를 받아오기만 했던 아이들이 난생처음 고사리 같은 손으로 김장김치를 담가서 할머니에게 처음으로 선물했다는 후기 등 김치를 통한 나눔의 의미까지 생각해보게 만드는 훈훈한 미담들이 줄을 이었다.


17일 부귀농협에 따르면, 이번 축제 매출은 온라인 주문 판매 650건 3800여만원, 드라이브 스루 판매 200건 1900만원으로

총 5700만원가량이다.


전춘성 진안군수는 “이번 비대면 마이산김치축제는 코로나19 사태 및 코로나 블루 국면에 맞이한 어려운 상황 가운데 개최 됐지만 소비자들에게는 가족의 정을 느끼며 민족 전통문화를 체험할 수 있는 계기가 되고, 우리 농민들에게는 고부가가치 농산물을 판매할 수 있는 기회가 됐다”며 “향후 그 잠재력을 살려 진안군과 대한민국을 대표하는 명품 축제로 발전시켜 나가겠다”고 밝혔다.

국내 연구진이 오래된 김치 표면에서 자주 발견돼 곰팡이로 오인되는 흰색막의 정체를 알아냈다.





세계김치연구소 미생물기능성연구단은 22일 김치 표면에 생기는 흰색막은 곰팡이가 아닌 효모에 의해 생긴 골마지(발효성 식품 겉표면에 발견되는 흰색막)이며 이들 효모에서 독성 유전자가 발견되지 않은 것으로 확인했다고 밝혔다.





골마지는 일반적으로 간장과 된장, 고추장 같은 발효성 식품 표면에 주로 나타난다. 김치에서도 유산균과 효모에 의해 발효가 진행되면서 숙성될 때 발생할 수 있다. 김태운 김치연 미생물기능성연구단 책임연구원은 “김치에서는 국물에 잠기지 않은 표면에서 골마지가 나타난다”며 “산소와 반응하는 표면에 있는 효모가 문제가 있을 것으로 예측됐다”고 말했다.





연구진은 골마지를 형성한 효모의 종류와 특징을 확인하기 위해 배추김치 와 갓김치, 열무김치, 백김치를 수집해 차세대 염기서열 분석을 진행했다. 차세대 염기서열 분석법은 DNA를 여러 조각으로 분해한 다음, 조각별 염기서열을 조합하는 방식으로 전체 정보를 해독하는 기술이다.


경산시, 자인면지역사회보장협의체(공동위원장 이영임, 최순환)에서는 14일시원하고 아삭한 여름 김치를 정성껏 담가 반찬 마련에 어려움이있는 저소득 취약계층 20가구에 전달하였다.





무더위가 기승을 부리는 날씨에도 자인면지역사회보장협의체 위원들이 직접재료를 손질하고 정성과 사랑의 양념을 더 하여 맛있는 열무 물김치와 배추겉절이를 담가 저소득 취약계층 가구를 직접 방문하여 전달하고 안부를 확인하였다.





이영임위원장은 “위원들이 정성을 다해 맛있게 담근 여름 김치를드시고 무더위에 지친 입맛이 돌아오고 여름을 건강하게 이겨낼 수 있는 요긴한 반찬이 되길 바란다.”라고 말했다.





최순환 자인면장은 “무더위로 지치고 힘든 날씨에 농번기로 바쁘실 텐데 열 일 제쳐두고 직접 발로 뛰시는 협의체 위원님의 따뜻한 마음에 늘 감사드리며, 손수 담근 시원하고 아삭한 여름 김치 전달로 저소득 취약계층에게 무더위와 외로움을 이기는 큰 힘이 되었으면 좋겠다.”라고 전했다.
