one pot chicken parmesan meatballs
If you are a chicken parmesan fan like me, you NEED to make this recipe. It is so easy, on the healthier side (no frying), and oh boy, is it a family favorite. Think meatballs meet chicken parmesan, that's what this is - ground chicken, seasoned and formed into meatballs and then baked in a tomato sauce with lots of mozzarella cheese. Added bonus - make this meal in one pot!
One Pot Chicken Parmesan Meatballs

INGREDIENTS
1 lb ground chicken
½ cup bread crumbs
⅓ cup parmesan cheese, grated
2 T fresh parsley, finely chopped
4 cloves garlic, minced and divided
1 large egg
¼ t salt
⅛ t pepper
4 T olive oil, divided
1 28 oz can crushed tomatoes
1 t crushed red pepper
2 cups mozzarella, shredded
INSTRUCTIONS
Preheat oven to 400.
Combine chicken, bread crumbs, parmesan, 2 cloves garlic, egg and parsley in bowl. Form into 1 inch meatballs.
In 10 inch oven proof skillet, heat 2 T olive oil. Add meatballs and brown. Remove to plate. In same skillet, heat 2 T olive oil. Saute remaining 2 cloves garlic until fragrant. Add crushed tomatoes and red pepper. Bring to a low boil and add meatballs. Sprinkle with mozzarella and bake for 10-15 minutes until chicken is done.
