Brian's Italian Sauce Recipe

2 cans of crushed tomatoes
1 onion
4 cloves of garlic - more or less to your liking
sugar 1 tbls
salt - to taste
pepper - to taste
red pepper - to taste
olive oil - 3-4 tbls
3 tbls of butter
Basil and/or Oregano or both...to taste.
heat your stock pot on med. low while prepping your onion and garlic - do not get too hot or it will burn the onions/garlic

dice your onions as small as possible....then add a couple tbls of olive oil into pot and add the onions. Then, heat them low and slow for 15 mins or so
and add a tbls of sugar so it will help caramelize the onions making it a smoother sauce.

Once the onions look soft, cooked and lightly browned add the chopped garlic for a minute or two - don't brown the garlic it becomes bitter. Add your two cans of sauce now. Stir and add some water and keep the temp on low/med. Add salt, pepper, spices, red pepper, garlic powder and let it cook. Stir occasionally and keep the lid off the pot so it can cook down, then add more water and keep this going for upwards of 2 hours. Right before you are ready to serve add your butter and some a couple tbls of olive oil then stir and melt. That finishes it off just make sure during this process you taste, taste taste and add a good amount of salt and spices while cooking. Good luck and good eating!! Brian
