Liquor can be an incredible gift, especially when it's from a friend or family member. Simply transfer the liquor to a sealed plastic bag or freezer container, leaving -inch headspace, and seal and freeze as usual. Shucked oysters can also be frozen this way.

Freezing an entire oyster presents several challenges. Not only must the liquid freeze uniformly, but it must also do so quickly enough that the liquid doesn't drain. Once the oyster is opened and free of debris, remove it from the water and place it in a pot. If it has been awhile since it was cleaned, add some balsamic vinegar to the water in order to get rid of any bacteria or other impurities in the water. Place it in the refrigerator until you're ready to cook with it. While it's freezing, be sure to run some water through the oyster and get rid of any air pockets in the frozen oysters so that when you do cook them they will be as fresh as when they were first harvested.

Once you have thawed the oysters, remove them from the refrigerator and rinse them off under running water. Once this is done, you can put them in your frying pan or oven. Be sure to avoid any contact with hot surfaces to prevent burning. Thawing them out is fine at room temperature, but once they are frozen, it can take approximately four hours before they are ready to cook with. Once you have frozen the shucked oysters, you can now cook them just like you would if you had fresh oysters in your refrigerator.
