Baingan Masala Dhaba Style | Brinjal Masala

Making Dhaba Style Baingan Masala at Home

The recipe involves a two-tier process with some prior preparations. Therefore, without much ado, let’s cook.

Ingredients:

Brinjal - 300 gram
Onion - 1 big chopped
Tomato - 1 big chopped
Cumin seeds - 1 tbsp
Bay leaves - 2
Ginger Garlic Paste - 1 tbsp
Turmeric Powder - ½ tsp

Kashmiri Red Chilli Powder - 1 tbsp
Cumin Powder - ½ tsp
Coriander Powder - 1 tsp
Garam Masala Powder - 1 tsp
Roasted and Grinded Peanuts - 1 tbsp
Salt as per taste
Water - 1 cup
Oil for cooking

Method to prepare Baingan Masala Recipe:

1. Shallow fry the Brinjals in 4 to 5 tbsp oil for 5 minutes on all sides.
2. In the same pan, add some more oil and sauté the bay leaves and cumin seeds.
3. Add chopped onion and fry until color slightly changes.
4. Add the ginger garlic paste and sauté for 1 minute.
5. Add all the powdered spices and mix well.
6. Add the chopped tomatoes, mix well and cook covered for 8-10 minutes.
7. Add the crushed peanuts, salt to taste and 1 cup of water.
8. Mix well and cook for about 2 minutes.
9. Add the fried Brinjals to the boiling curry and cook covered for 5 to 10 minutes.
10. Once the Masala is thicker and the brinjals are cooked to soft, turn off the flame.
11. Serve it hot and enjoy!
