The Hidden Mystery Behind Olive Oil
n annual international symposium on olive oil and health hosted by the Yale School of Public Health is heading to the center of the olive oil world - Spain top experts will meet in the coming months to study the potential and impact of what is sometimes referred to as "liquid gold."

Co-hosted by the University of Jaen, the symposium will run from December 9 to 12 in Jaen, a city in the province of Andalusia which is the center of Spain's olive oil belt and an area that is being considered as a UNESCO World Heritage site for an olive grove, known as the Mar de Olivos, or "Sea of Olives." This is the third symposium that has been held in 2018. The previous year's symposium was delayed due to the epidemic.

The event was organized with Vasilis Vasiliou, Ph.D., the Susan Dwight Bliss Professor of Epidemiology and the chair of the Yale School of Public Health's Department of Environmental Health Sciences, along with Tassos C. Kyriakides, Ph.D. Tassos C. Kyriakides, Ph.D., Yale Center for Analytical Sciences (biostatistics) faculty member. The symposium will bring participants from business, academia farmers, national and regional decision makers to explore the untapped opportunities of the Olive tree as well as its fruits including olive oil.

"We're thrilled to return. This year's event will be the largest yet, and features an amazing and exciting program. I am incredibly excited about bringing together so many people who are as obsessed with olive oil like I am." declared Vasiliou. "There's no other gathering anywhere else in the world."

The symposium of this year will cover diverse topics that are central to the cultivation of olives as well as what the next steps for olive oil for both human and planet health. The topics include:

Recent studies have revealed improvements in health associated with olive oil.
How climate change is impacting olive groves and how the cultivation of olives can positively affect the climate.
Successful olive oil marketing along with business strategies.
Each program session will conclude in a panel discussion and an open-ended Q&A. The symposium will also feature the opportunity to taste olive oil and an educational tour through the olive groves.

The Yale School of Public Health is seeking to launch an institute called the Yale Institute for Olive Sciences and Health, which would be devoted to the study of the olive tree, its fruits and their derivatives, and ways to further integrate the fruit and its components into the diet of people. The institute will also concentrate on planetary health issues such as sustainability, circular economy models and climate change.

Vasiliou, who is from Greece as well as a major center of olive oil production as well as an important consumer, suggested that a proposal to establish an olive oil institution needs to be completed and put up for review before the year's end. This institute would function as a global institution that would facilitate and oversee research in all fields related about the oil tree, its fruits and products.

There's nothing like this conference anywhere else in the world.

Vasilis Vasiliou
"I grew up with olive oil and have seen its benefits firsthand. Mediterranean nutrition has been recognized for a long time as the most healthiest in the world, and its cornerstone is olive oil." he added. "I want to help establish the Yale School of Public Health's collaborative leadership in this crucial area."

In the meantime, Kyriakides, an olive oil sommelier not only always is tasting oils from around the world, he takes in large quantities of olive oil every day for his cooking, in addition to his daily morning additional virgin olive oil drink.

"It works for me and is delicious and healthfully nutritious," he said. "The olive tree and olive oil have connected individuals for centuries. it's our job as public health professionals to ensure the benefits that this superfood may bring to the health of humans are shared with the people we interact with."

The research of the past 50 years indicates that olive oil can promote healthy health, Kyriakides said. A daily consumption that is 20g of olive oil (about two tablespoons) that includes a certain amount of a certain polyphenol (at least 5 mg of hydroxytyrosol as well as its derivatives) has a health benefit, approved by the European Food Safety Agency and the U.S. Food and Drug Administration and is related to the protection of blood fats from oxidative stress.

Spain, which requested to be the co-host for this year's symposium is the largest producers of olive oil around the globe, accounting for 35% - 40% of the output, Kyriakides said. Furthermore, many of the innovations in the area of olive agriculture, as well as sustainability and environmental health initiatives have come out of Spanish practices.

"Now more than ever before, the need for such an internationally focused institute is so apparent in our efforts to develop healthier, more environmentally sustainable methods that will improve both our human and global wellbeing," Kyriakides said.

However, the primary fatty acid present in olive oil is the monounsaturated fat known as Oleic acid, which accounts for 73 percent of the oil content.

Studies suggest that oleic acids reduce inflammation and may even improve the function of genes linked to cancer ( 2Trusted Source, 3Trusted Source, 4Trusted Source, 5Trusted Source).

Monounsaturated fats can also be resistant to high heat which makes olive oils that are extra-virgin an healthy option for cooking.

The most significant anti-inflammatory properties are produced through antioxidants. The most important of them is oleocanthal, which has been shown to work like ibuprofen which is an anti-inflammatory medication ( 10Trusted Source).

Some scientists estimate that the oleocanthal in 3.4 tablespoons (50 ml) from extra-virgin olive oil has similar effects to 10% of the adult dosage of ibuprofen ( 11Trusted Source).

The research also suggests that oleic acid, the main fatty acid of olive oil could reduce levels of important inflammatory markers such as C-reactive protein (CRP) ( 2Trusted Source, 3Trusted Source).

Another study showed that antioxidants in olive oil may inhibit some genes and proteins which cause inflammation ( 12Trusted Source).

A huge review of research of 841,000 individuals found an olive oil to be the only source of monounsaturated fats that is associated with a lower risk of heart and stroke diseases ( 14Trusted Source).

In another study that included 140,000 participants, those who ate olive oil significantly less at risk of having a stroke than those who did not ( 15Trusted Source).

Olive oil that is extra virgin and unrefined are among the most important ingredients in this diet plan, which protects from heart diseases in a variety of ways ( 19).

It reduces inflammation, shields "bad" LDL cholesterol from oxidation, and improves the blood vessels and may help prevent excessive blood clotting (20Trusted Source 21Trusted Source, 22TrustedSource 23Trusted Source, 24Trusted Source, 25Trusted Source).

Interestingly, it has also been proven to reduce blood pressure which is among the biggest risk factors associated with cardiovascular disease as well as premature deaths. One study found that olive oil was found to reduce the need to take blood pressure medications by 48% ( 26Trusted Source, 27Trusted Source, 28Trusted Source).
