ingredients:
- oil for sauteing
- ground black pepper to season
- garlic, minced*
- onion, chopped*
- 6 smallish pieces of chicken
- 6-8 cups chicken stock
- 1 1/2-2 cups rice, preferably glutinous (but any kind will work)
- fish sauce for flavoring**
*how much garlic and onion you may ask? however much your heart desires (better yet, close your eyes and think 'how much would moni add?')
**adds more flavor than plain old salt, but if u don't have it, salt is fine i guess :/
directions
1. put oil on medium heat in a big pot, and when it gets hot, add the ground black pepper to the oil (it's for the flavor)
2. saute the garlic and onions for a few minutes until translucent
3. add the chicken and cook until seared/just browned (it will cook some more later)
4. add the rice first, then add the chicken stock
5. let cook on medium-low for 45 minutes, occasionally stirring so the rice at the bottom doesn't burn. if it gets too thick and paste-like, add more water or stock
6. add fish sauce to taste (be careful not to put too much)
7. enjoy hot :)

- ginger cut into small pieces
- chopped green onion
- chicharron
- toasted garlic
- philippine lime (or lemon/lime)
- kasubha/red safflower for flavor and color (makes it nice and yellow)
