연구진은 골마지를 형성한 효모의 종류와 특징을 확인하기 위해 배추김치와 갓김치, 열무김치, 백김치를 수집해 차세대 염기서열 분석을 진행했다. 차세대 염기서열 분석법은 DNA를 여러 조각으로 분해한 다음, 조각별 염기서열을 조합하는 방식으로 전체 정보를 해독하는 기술이다.
