행사 중 주목받은 프로그램으로는 홈페이지로 신청한 전국의 50가족들에게 선착순 ‘김장체험 꾸러미’(절임배추10kg, 양념4kg)를 공짜로 보내주고 김장체험 후기를 공유하는 ‘온라인 김장체험 챌린지’였다.

이러한 우려를 불식시키고자 식약처는 김치 수입 규모에 따라 단계적으로 해썹 인증을 의무 적용하는 방안을 추진한다. 먼저 오는 10월 1일부터 수입량 1만톤 이상의 해외 김치 제조업소가 해썹 인증을 의무적으로 획득해야 한다. 2022년엔 5000톤 이상, 2023년 1000톤 이상, 2024년엔 모든 김치 해외 제조업소가 해썹 의무 적용 대상이 된다.

식약처 관계자는 다소비 수입 식품으로 가열공정이 없어 엄격한 관리가 필요한 수입 배추김치를 해썹 의무 적용 품목으로 정해 국민들을 안심시키고자 한다며 앞으로도 해외제조업소 위생관리를 철저히 하여 수입식품에 대한 국민 우려를 완전히 해소할 수 있도록 최선을 다하겠다고 말했다.


최근 중국산 절임 배추에 대해 위생 논란이 불거지면서 국내 소비자의 중국산 식품에 대한 공포가 재발하고 있다. 전문가들은 해당 배추가 국내로 들어왔을 가능성은 낮다고 진단했지만 소비자들의 반응은 싸늘하다.

지난 21일 저녁 서울 마포구 음식문화거리에서 만난 박정임 씨(57·여)는 예전부터 중국산 음식이 비위생적이라고 생각하긴 했다며 배추 절이는 영상을 보며 '역시나 중국'이라고 생각했다고 말했다. 박 씨는 김치가 됐건 다른 음식이 됐건 중국에서 들어온 음식이라고 하면 아예 거르는 게 나은 것 같다고 말했다.

김 책임연구원은 “5종의 효모들의 전체 유전자에서 독성을 띠는 물질을 만드는 유전자는 확인되지 않았다”며 “골마지가 생긴 김치가 건강에 큰 문제는 없지만 추가 동물 실험이 필요하다고 말했다.



연구진은 골마지를 예방하기 위해선 김치를 포장할 때 모든 부분을 국물에 잠기게 하거나 산소와 접촉면이 생기지 않도록 비닐로 감싸야 한다고 설명했다. 또 약 4도의 저온이 유지되도록 냉장고를 관리해야 한다고 덧붙였다. 김 책임연구원은 “혹시 모를 위험을 피하려면 골마지가 생긴 김치는 그 부분을 걷어낸 다음, 볶거나 끓여먹는 방식으로 김치를 조리해 먹는 것이 안전하다고 덧붙였다.

인천시 남동구가 브랜드와 레시피를 개발해 만든 ‘소래찬’ 김치가 6월 출시될 전망이다.



구는 14일 농업회사법인(주) 우리김치, 명가식품, 생생찬, 일미식품, 정우식품 등 지역 식품제조가공업체 5곳과 소래찬 김치 생산·유통을 위한 업무 협약을 체결했다.



이번 협약은 구 김치 공동 브랜드인 소래찬 상표 사용과 새로 개발한 레시피 제공 등을 위해 마련됐다.



앞서 구는 대국민 명칭 공모와 BI 연구 용역을 통해 김치 공동 브랜드 소래찬을 공개하고, 새 레시피 개발 및 생산·유통 준비에 주력해 왔다.



협약에 따라 참여 업체는 2년 간 소래찬 상표와 레시피를 사용해 배추김치, 백김치, 나박김치를 생산·유통할 수 있다.



생산 업체는 소래찬 상표에 대한 이미지와 소비자 신뢰를 높일 수 있도록 최고의 품질 수준을 유지해야 한다.



특히 구는 해당 제품에 대해 공인품질검사기관의 품질검사를 받도록 요구할 수 있고, 검사 결과 부적합하거나 법 위반 시 김치 제조 및 상표 사용을 중지할 수 있다.



또 최고의 맛을 꾸준히 유지할 수 있도록 정당한 사유 없이 원재료 원산지나 구입 방법을 변경할 수 없도록 했다.



협약 기간은 2년으로, 특별한 문제가 없는 경우 재협약하고 협약기간 중 식품위생법 위반 등 협약사항 불이행시 협약을 해지한다.
