‘진안고원마이산김치축제’(이하 김치축제)가 지난 15일 성황리에 마무리 됐다.

페이스북에 김치 담그는 영상을 올린 한모씨는 “보내준 절임배추와 양념으로 김치를 담가 여럿이 맛있게 나눠먹었다”며 소개하기도 했다.

축제 기간뿐만 아니라 축제 기간 이후에도 온라인에서 많은 분들과 소통하고자 하는 김치축제의 의지를 담아 특별히 제작한 프로그램으로 많은 관심을 보였다.

코로나19로 인해 줄어든 김치 수입량도 김치 대란에 가세했다. 관세청 수출입 무역통계에 따르면, 지난 7월 김치 수입량은 2만2681t으로 지난해 같은 기간과 비교했을 때 2561t 줄었다.

CJ제일제당 관계자는 전문 수급지가 있는 회사들도 수급에 차질을 빚고 있는 만큼 소규모 업체들의 상황은 더욱 어려울 것이라고 했다.

추석 대목을 앞둔 식품업계는 김치 수요가 더 늘어날 것으로 보고 분주하게 움직이고 있다. 대상 관계자는 현재는 원자재 수급이 원활히 이뤄지고 있다. 김치 수요가 예상치보다 높아서 홈쇼핑이나 마트 등 소비자들이 더 많이 찾는 유통 채널에 먼저 공급하느라 품절이 빚어진 것이라며 최대치로 생산 물량을 늘려 공급에 차질을 빚어지지 않도록 하고 있다고 했다. CJ제일제당도 최대한 물량 확보에 집중해 공급하도록 노력할 계획이다.

김 책임연구원은 “5종의 효모들의 전체 유전자에서 독성을 띠는 물질을 만드는 유전자는 확인되지 않았다”며 “골마지가 생긴 김치가 건강에 큰 문제는 없지만 추가 동물 실험이 필요하다고 말했다.



연구진은 골마지를 예방하기 위해선 김치를 포장할 때 모든 부분을 국물에 잠기게 하거나 산소와 접촉면이 생기지 않도록 비닐로 감싸야 한다고 설명했다. 또 약 4도의 저온이 유지되도록 냉장고를 관리해야 한다고 덧붙였다. 김 책임연구원은 “혹시 모를 위험을 피하려면 골마지가 생긴 김치는 그 부분을 걷어낸 다음, 볶거나 끓여먹는 방식으로 김치를 조리해 먹는 것이 안전하다고 덧붙였다.
