이 때문에 업계는 인증제 도입보다 국산 김치 생산 업체에 대한 지원을 강화하는 것이 실질적인 도움을 줄 것이라는 입장이다. 이하연 대한민국김치협회 회장은 “생산업체는 원재료를 저렴하게 사서 저장할 수 있는 능력이 있어야 수익성을 키울 수 있다”며 “저장시설을 마련하기 어려운 영세 업체에 저장시설을 운영할 수 있도록 지원해야 한다”고 말했다.

연구진은 골마지를 형성한 효모의 종류와 특징을 확인하기 위해 배추김치와 갓김치, 열무김치, 백김치를 수집해 차세대 염기서열 분석을 진행했다. 차세대 염기서열 분석법은 DNA를 여러 조각으로 분해한 다음, 조각별 염기서열을 조합하는 방식으로 전체 정보를 해독하는 기술이다.
