진안군에서 후원하고, 부귀농협에서 주최한 이번 비대면(온라인) 김치축제는 28년의 역사를 자랑하는 마이산김치공장에서 최초로 열린 행사였다.

전춘성 진안군수는 “이번 비대면 마이산김치축제는 코로나19 사태 및 코로나 블루 국면에 맞이한 어려운 상황 가운데 개최 됐지만 소비자들에게는 가족의 정을 느끼며 민족 전통문화를 체험할 수 있는 계기가 되고, 우리 농민들에게는 고부가가치 농산물을 판매할 수 있는 기회가 됐다”며 “향후 그 잠재력을 살려 진안군과 대한민국을 대표하는 명품 축제로 발전시켜 나가겠다”고 밝혔다.

진안군이 후원하고 부귀농협이 주최·주관한 이번 축제는 지난 12일부터 3일 동안 온·오프라인에서 동시 진행됐다.
온라인에서는 김치담그기 동영상 올리기, 완제품 김치 인터넷 주문 할인판매, 오프라인에서는 절임배추, 양념, 완제품 김치
등에 대한 ‘드라이브 스루’ 할인판매 행사가 열렸다.

행사 중 주목받은 프로그램으로는 홈페이지로 신청한 전국의 50가족들에게 선착순 ‘김장체험 꾸러미’(절임배추10kg, 양념4kg)를 공짜로 보내주고 김장체험 후기를 공유하는 ‘온라인 김장체험 챌린지’였다.

축제 기간뿐만 아니라 축제 기간 이후에도 온라인에서 많은 분들과 소통하고자 하는 김치축제의 의지를 담아 특별히 제작한 프로그램으로 많은 관심을 보였다.

그리고는 물김치 앞에 주재료 또는 특이하게 사용한 재료명이나 지역명을 부쳐 시금치 물김치. 인삼 오이 물김치, 경상도 통배추 물김치 등으로 부른다. 동일한 재료인 경우는 썬 모양에 따라 부르기도 한다. 나박 물김치는 주재료인 무를 얄팍하고 네모나게 썬 모양을 따서 붙인 이름이다.

최근 중국에서 비위생적으로 절임배추를 만드는 영상이 공개되며 손님들의 ‘중국산 김치’ 기피 현상이 두드러지자 국산으로 속여 판 식당들이 대거 적발됐다.

국립농산물품질관리원은 최근 일주일 동안 전국 3000여 곳의 음식점을 대상으로 긴급 단속을 벌인 결과 130곳이 김치 원산지를 허위로 표시해 적발됐다고 12일 밝혔다.

관리원에 따르면 중국산 배추김치를 사용하면서 ‘배추 국내산, 고춧가루 중국산’으로 표기해 적발된 곳이 가장 많았다. 반찬용뿐 아니라 김치볶음밥, 김치찌개, 김치만두 등을 조리해 판매하는 식당 중 중국산 김치를 이용하면서 원산지를 ‘국산’으로 표기한 곳도 다수였다.

신종 코로나바이러스 감염증(코로나19) 확산 후 배달이 늘어나면서 배달 앱에 배추김치의 원산지를 국내산으로 거짓 표시해 변경 조치한 곳들도 적지 않았다.

“국내산 김치만 사용합니다”라고 안내한 식당도 예외는 아니었다. 강원도의 한 국숫집은 중국산 배추김치 와 국내산 배추김치 두 가지를 혼용해 사용했지만 메뉴판에는 ‘국내산만 사용한다’고 표기해 놓았다.

전남 여수의 한 식당은 중국산 배추김치를 씻어 백김치로 만든 후 손님에게 반찬용으로 제공하면서 원산지를 국내산으로 표시해 적발됐다.

인천의 한 반찬가게는 중국산 김치를 판매하면서 가판대 하단에는 작은 글씨로 원산지를 중국으로 적었지만, 커다란 현수막에는 ‘전라도 반찬’이라는 문구를 넣어 적발되기도 했다.

식품의약품안전처는 지난달 중국산 절임 배추와 김치에 대해 제품의 성질‧상태‧맛‧색깔을 확인하는 ‘관능검사’와 물리‧화학‧미생물학적 오염상태 등을 확인하는 ‘정밀검사’ 단계를 한층 강화했으나 소비자들의 불안은 가라앉지 않고 있다.

골마지는 일반적으로 간장과 된장, 고추장 같은 발효성 식품 표면에 주로 나타난다. 김치에서도 유산균과 효모에 의해 발효가 진행되면서 숙성될 때 발생할 수 있다. 김태운 김치연 미생물기능성연구단 책임연구원은 “김치에서는 국물에 잠기지 않은 표면에서 골마지가 나타난다”며 “산소와 반응하는 표면에 있는 효모가 문제가 있을 것으로 예측됐다”고 말했다.



연구진은 골마지를 형성한 효모의 종류와 특징을 확인하기 위해 배추김치와 갓김치, 열무김치, 백김치를 수집해 차세대 염기서열 분석을 진행했다. 차세대 염기서열 분석법은 DNA를 여러 조각으로 분해한 다음, 조각별 염기서열을 조합하는 방식으로 전체 정보를 해독하는 기술이다.

농협에는 김치가공공장을 성공적으로 통합한 선례가 있다. 2011년 경기도 내 3개 지역농협의 김치공장을 하나로 묶어 탄생한 경기농협식품조합공동사업법인이 바로 그 주인공이다.
