‘진안고원마이산김치축제’(이하 김치축제)가 지난 15일 성황리에 마무리 됐다.

진안군에서 후원하고, 부귀농협에서 주최한 이번 비대면(온라인) 김치축제는 28년의 역사를 자랑하는 마이산김치공장에서 최초로 열린 행사였다.

코로나19 확산 영향으로 여느 흔한 드라이브스루 행사장처럼 발길이 뜸 할 줄 알았던 예상과 달리 진안군 부귀면 마이산김치공장에서 개최됐음에도 하루 종일 꾸준하게 방문 차량이 있을 정도로 호응이 좋았다.

김치를 보면 한때 나박 물김치에 끌려 자주 들렸던 주막집이 떠오른다. 그 집은 일주일 내내 손님들로 북적거린다. 술과 안주를 주문하면 덤으로 나박 물김치 한 사발이 따라 나왔다. 사람들은 맛이 일품이다.며 찬사를 보냈다. 감산미 (甘酸味)와 짜릿하고 시원한 맛이 짠맛과 잘 어우러져 속이 뻥 뚫리는 기분을 느낀다.

연구진은 골마지를 형성한 효모의 종류와 특징을 확인하기 위해 배추김치와 갓김치, 열무김치, 백김치를 수집해 차세대 염기서열 분석을 진행했다. 차세대 염기서열 분석법은 DNA를 여러 조각으로 분해한 다음, 조각별 염기서열을 조합하는 방식으로 전체 정보를 해독하는 기술이다.
