The most popular variety is the black edamame.

Edamame beans are approximately 1 inch long. The seeds are in the brightly colored pod. Melanin, a natural plant pigment, gives the pod its green color. The soybean pod with a black skin contains seeds that can be eaten raw or cooked. When kept in airtight containers edamame beans can last up to a year.


Green soybean is the type that is most often used in food and beverages in the United States. It is slightly bitter in comparison to its black or red counterparts. It has a milder taste. Since it is a milder bean it is likely to have less flavor than Edamame beans.

It has been proven that soy can stop cholesterol from getting into the arteries. Its protein content isn't the highest among other proteins, however it does make up the majority of protein in soy based foods.

Another interesting bit of trivia The word "edamame" itself means "untreated" or "unmalted." Untreated or unmalted soybean milk is not feasible. Tofu is also called yamtofu in Japan. It's odd that I'd learn about this reference to tofu originates from Japan!

The only vegetable soybean grown in the United States is beer beans. It is used as a filler for different kinds of wheat chip cookies sold in the United States. Beer Beans is the common term used to describe this product. According to my knowledge, no other person uses the term edamame in relation to beer bean products. Japan is the most popular location to utilize this vegetable soybean.

As you can see, the three different vegetable soybeans grown in the United States all come from different regions of the world. Some are grown in the USA, while others are grown in Japan or China. Each has its own benefits and is nutritious and delicious. One may be more popular than the other in a particular country. I am a fan of the idea that lima beans (the sweet potato) is my favourite vegetable in the United States, but that claim is a matter of personal preference.

When talking about green beans, what are we talking about? What is it that is contained in the green bean pod? To get access to the nutrients and flavor that is present in fresh green beans, I suggest the use of freeze drying instead of air drying. I've found that the pods retain their flavor and fiber well when they are stored in the freezer.

Green beans that are freeze dried are also referred to as poppies. They are extremely small and oval in appearance. Inside the pod are the dried seeds, and inside that are the minerals and vitamins found in whole grains. These little jewels can be made into an nutrient-rich, gluten-free, and energy-rich snack or meal by using a little imagination.

You can dry the pods in the freezer and then eat them raw. To make your own salsa, you can make use of fresh herbs like cilantro, parsley, chives, garlic or a combination thereof. This salsa can be made using various vegetables, including canned tomatoes as well as corn, peas and bell peppers, onions, cayenne, and corn tortillas.
