Edamame is known as "ah-duh-muhs," is a round green or yellow soybean that is similar in appearance to kidney beans. Through the tiny holes in the pods, the bean's protein and starch as well in its oil content are easily absorbable by plants. Edamame is highly fertile because of its early harvesting. It is often compared to kidney beans due to its nutrient level. It has a sweet taste with a slightly nutty background.
The average life of mature edamame pods is 3 months, however, some were harvested earlier and have been dried for several years. The aroma and flavor may differ between different varieties. Edamame should be picked only when it is still green. Older pods can have bitter flavor that isn't beneficial to the plant. Although the pod can be stored for a long time once it has dried, its value will decrease the longer it's kept.
After the pod is harvested, it needs to be cracked to get the seeds released, which takes around one minute. If the pod is left to crack open, it will hold the moisture in the inside, resulting in the seeds becoming hard and dry. Soybeans are only sold if they are sprouted. This means that the sprouting must take place in a greenhouse or a cold room and away from direct sunlight. To prevent spoilage, the seeds should be dampened prior to being planted in a garden or pot; there are a number of commercially-available products available that dampen the seeds, such as tofu and pectin powder, but they can be expensive.
After beans have been sprouted, they must be dried on a wire grid that is open. This will help prevent the beans from scattering over an extensive area which could lead to them becoming difficult to control when they are sold in shops. They are then ready for their trip to the market. Soybeans that are already sprouted can be kept fresh for upto a month. Green soybeans will lose their taste after a week. However they can be kept in the refrigerator for several months.
After the green beans have been dried and have shed their outer skins, they undergo what is referred to as "thermal pasteurization." The outer shell of the seed, along with the wax coating, will be sucked away but the seeds remain intact. Soy wax is a naturally-produced product made from soybeans, and has been used in the food industry for years due to its nutritional value. It doesn't alter the flavor of soybeans, however it helps to keep the seeds fresh.
After the edamame is harvested, it should be capable of enduring temperatures. Soybeans are a delicate plant and easily damaged if kept at room temperature without any protection. Therefore, it is vital that the edamame being prepared to be stored in the refrigerator. Soy sauce can be added at the last moment to sweeten the soybeans, however, the most popular method to prepare edamame is using a hot-water bath. Edamame can also be steamed however this could reduce its nutritional value and shorten its shelf time.
