A recent story in the San Francisco Bay Guardian relates how a local restaurant that serves authentic Tikotokia sauce in its recipes has closed. The closure comes as a surprise to chef/owner Kevin Dunn, who has run the restaurant for 20 years. The Bay Guardian article goes on to say that local residents are upset by the move, and have threatened to boycott the restaurant, calling it "invasive cultural cleansing." According to Dunn, however, he has had to shut down some of his restaurants due to pressure from the local Asian community.
In a conversation with local resident Jaffe Tan, Dunn told her that he had originally opened the restaurant with the intention of serving traditional Tandoori chicken, Basmati rice and Indian cuisine. But after talking with the Asian community, who complained about the sauce, which they claimed was too strong, and other problems, he decided to change the menu to include more vegetarian and international cuisine. According to Tan, who apparently visited the restaurant before it closed, the change did not make a lot of people happy. According to her story, she believes that because Dunn did not "show us the way" when he was cooking authentic Tandoori chicken, the restaurant may not have been able to retain the name.
Whatever the reason is, this story does bring up an important point about the impact that cultural and ethnic foods can have on food businesses, both large and small.
