What is Pork Cushion Meat or Ham? Pork cushion (also called ham hocks) is a short triangular-shaped cut which s taken from either the anterior (or long) side of the roast ham, also known as the roast shoulder. The cut is usually boneless, or semi-boneless, and is traditionally used to create roast beef or other forms of roast pork. The ham hocks are usually used on the outside of the roast pork loins, where they add a rich, dark, and rich flavor to the roast.
There are many ways to cook a ham hock. Depending upon how thick you want your pork butt to be when pulled apart, different cuts of meat can cook in different ways. Different cuts of meat will also require different temperatures when cooked, so you should pay attention to what you are cooking when determining what temperature to cook the meat to, especially if you are using a rotisserie smoker. Cooking a thin cut of meat at the right level of temperature to release its juices while cooking, while maintaining a consistent temperature all through the cooking process, will produce a very tender piece of meat.
There are two cuts of what is called pork cushion, the flat cut and the rib roast. The flat cut is the most popular cut for picnic shoulders, and it is also the least difficult to prepare. This is because it only requires a sharp knife, a cutting board, and a hot grill or smoker, and you are ready to start cooking immediately.
If you would like to make a pulled pork recipe that is more firm, then you will want to make use of some of the better qualities of the pork cushion. These include the brisket, which offers a good deal of flavor, and very nice texture, and the shank, which is very lean but has a wonderful balance of flavor that covers up any lack of juiciness in the meat. Because the brisket and shank are both very thin, you do not need to use a whole lot of liquid to cook them, but you should be aware that they can be a bit tough to chew after the fact. In fact, if you do not find the flavors of your pulled pork to your liking, you may want to consider using store bought basting sauce or a marinade to add a little more flavor to your finished product.
To measure the thickness of your pork cushion, simply take your finger and put it against the thickest part of the meat. That's the recommended reading for thickness, but it might not always be accurate. Another way to determine the right thickness is to use an instant-read thermometer. It will measure the internal temperature of the meat in just a few seconds. Check it often to catch inaccurate readings.
Pork butt and boston butt are the most common cuts used in what is pork cushion meat recipes. But you do not have to limit yourself to these two cuts. You can use other cuts like brisket, skirt steak, shank, or any other cuts your culinary skills and nose for. Just remember that these two cuts tend to require slightly different cooking techniques. If you do not have access to the necessary ingredients or if you are confident enough to make the recipes on your own, consider buying your ingredients online and pre-cooking them to get the same fresh, delicious results as you would from cooking them at home.
