Preparations
--- Chop (dice) these
Garlic
Green Chilli Peppers (Serrano Peppers) [1 or 2]
Ginger
--- Place ground spices in a bowl
Turmeric [1 tsp]
Cumin
Coriander
Curry Powder
Garam Masala
Indian Red Chilli Powder (Laal Marchu)
--- Wash thoroughly
Red Lentils [1 Cup]
--- Rest of Ingredients
Vegetable Broth
Crushed Tomatoes [14 oz Can]
Coconut Milk [1 can]
Almond Butter
Cilantro
Lemon
Cooking
--- Now sautee the garlic, green chilli, ginger and the ground spices and once fragrant, add the vegetable broth.
--- Now add the red lentils and the crushed tomatoes and lower the heat, cover the pan, and let the curry/red lentils simmer for 25 minutes
--- Now add coconut milk to balance spices and a tsp of almond butter
--- Now add some greens (if desired) (baby spinach, kale)
--- Finally, add some cilantro and lemon juice.
Serve with rice and/or naan
