These knives are made in order to give you the perfect straight cut every time. One thing to remember is that in order to get a proper cut, the knife should be placed at an angle of 45 degrees to the fish's surface. Another option would be to use a bone knife which is slightly curved. However, it is not advisable to use bone knives when cutting fish as it may cause severe injury to the fish.
