The Hidden Mystery Behind Olive Oil
An annual international symposium about olive oil and health organized by the Yale School of Public Health is heading to the center of the world of olive oil - Spain - where leading experts will be gathered in the coming months to study the possibilities and effects of what is sometimes referred to as "liquid gold."

The symposium is co-hosted with the University of Jaen, the symposium is scheduled to run from December 9 to 12 in Jaen the city of the province of Andalusia which is the center of the Spanish olive oil region, and an area under consideration as a UNESCO World Heritage site for a grove known as"the Mar de Olivos, or "Sea of Olives." This is the third international symposium held since the beginning of 2018. The previous year's symposium was delayed due to the pandemic.

Organised in collaboration with Vasilis Vasiliou, Ph.D. Vasilis Vasiliou, Ph.D., the Susan Dwight Bliss Professor of Epidemiology and Chair of the Yale School of Public Health's Department of Environmental Health Sciences as well as Tassos C. Kyriakides, Ph.D. Tassos C. Kyriakides, Ph.D., Yale Center for Analytical Sciences (biostatistics) faculty member. The symposium will bring together academics, business leaders, farmers and national and regional officials to discuss the untapped opportunities of the Olive tree as well as its products including olive oil.

"We're thrilled to be back. This year's festival is the biggest yet, with an impressive and challenging program. I am truly happy to be bringing the people together who are as obsessed with olive oil as I am," said Vasiliou. "There's nothing else like this event anywhere in the world."

The symposium this year will focus on various issues related to olive cultivation and how olive oil will evolve in the coming years for both human and planet health. They comprise:

Recent studies have revealed improvements in health associated with olive oil.
How climate change is impacting olive groves and how the cultivation of olives could positively impact climate.
Effective olive oil marketing along with business strategies.
Each session will end with a roundtable discussion and the opportunity to ask questions. It will include an olive oil tasting and an educational tour through the olive groves.

The Yale School of Public Health is seeking to launch The Yale Institute for Olive Sciences and Health, which will be dedicated to the scientific exploration and study of the Olive tree as well as its fruits and their derivatives, and ways to integrate the fruit and its products in the nutrition of individuals. The institute would also focus on global health issues such as sustainability, circular economy models along with climate-related change.

Vasiliou who hails from Greece and is also one of the major centers for olive oil production as well as a major consumer, stated that a proposal to establish an olive oil institution needs to be submitted for review by year's end. Such an institute would serve as a global body to facilitate and conduct research in all fields related about the oil tree, its fruits and products.

There's nothing like this conference anywhere else in the world.

Vasilis Vasiliou
"I have a family that was raised on olive oil and have seen its benefits firsthand. Mediterranean nutrition has been regarded for a long time as the most healthiest in the world, and its cornerstone is olive oil." said the doctor. "I am determined to establish Yale's and its School of Public Health's collaboration leadership in this crucial subject."

In the meantime, Kyriakides, an olive oil sommelier not only constantly is tasting oils from around the world, but also consumes copious amounts of olive oil daily for his cooking, as well as his morning Extra virgin olive oil shots.

"It is a good choice for me and is healthy and delicious," he said. "The olive tree and olive oil have been connecting people for thousands of years. it is our duty as public health professionals to ensure that the benefits this superfood may bring to the human body are shared with those we connect with."

cesareo monastero from the last 50 years indicates that olive oil can promote good health, Kyriakides said. A daily intake that is 20g of olive oil (about two tablespoons) which contains a specific amount of a particular polyphenol (at at least five mg of hydroxytyrosol or its derivatives) carries a health claim, approved by the European Food Safety Agency and the U.S. Food and Drug Administration, that relates to the protection of blood lipids from oxidative stress.

Spain has asked to host the co-host for this year's symposium is the largest producer of olive oil around the globe, accounting for 35 to 40% of the production, Kyriakides said. Furthermore, many of the innovations in the area of olive agriculture as well as sustainability and environmental health initiatives, have come directly from Spanish practices.

"Now more than ever before, the need for a globally focused institute is evident in our efforts to create better practices for sustainability that help both the planet and human health," Kyriakides said.

The main anti-inflammatory effects are mediated through antioxidants. The most important of them is oleocanthal, which has been demonstrated to function like ibuprofen which is an anti-inflammatory medication ( 10Trusted Source).

Certain scientists have estimated that the oleocanthal present in 3.4 tablespoons (50 milliliters) in extra virgin olive oil has the same effect as 10 percent of the adult dosage of ibuprofen ( 11Trusted Source).

The research also indicates that oleic acid the primary fatty acid found of olive oil could lower levels of important inflammatory markers, such as C-reactive proteins (CRP) ( 2Trusted Source, 3Trusted Source).

One study also showed that antioxidants from olive oil can inhibit some genes and proteins that drive inflammation ( 12Trusted Source).

Summary
Olive oil contains nutrients that fight
inflammation. They include oleic acid as well as the antioxidant Oleocanthal.

4. Olive Oil May Help Prevent Strokes
The cause of stroke is a disturbance of blood flow to the brain, whether caused by a blood clot or bleeding.

In developed countries stroke is the second leading cause of death, just behind coronary heart diseases ( 13).

The relationship of olive oil with stroke risks has been researched extensively.

A huge review of research of 841,000 individuals found that olive oil was the sole source of monounsaturated fats associated with a reduced risk of stroke and heart illness ( 14Trusted Source).

In another review in 140,000 participants, people who ate olive oil more at risk of suffering from stroke than those who did not ( 15Trusted Source).
