A Brief History of Kosher Salt
Kosher salt is a coarse-grain mineral and has been used traditionally for removing blood from meat. Unlike table salt, kosher salt does not contain iodine. In fact, in some cases it can also contain anti-clumping components. However, the salt is more refined than other salts, and has a less dense crystal structure than normal kosher salt. Because of this, kosher salt has a lower melting point than regular table salt.

This type of salt was developed by following a process called brine treatment, wherein substances like blood, animal innards and seawater are treated with salt and later stored for further processing. During this process, substances which would usually be lost from food were saved. These " Preservation substances" were then tested to determine their suitability as food preservation agents. After the initial test had been passed, kosher salt began to be used in cooking and baking. Today, kosher salt can be found in all kinds of food preparation, from sauces to salt blocks for sprinkling on top of baked potatoes.

Kosher salt contains two types of minerals: sodium and chloride. Sea salt and nacre, which is created by mashing together rock salts from Easter Island, are the two salts that make up kosher salt. These salts differ slightly from regular table salt because they are not processed to remove iodine and other trace minerals (see below). Regular table salt also contains traces of copper, manganese and magnesium.

The molecular structure of kosher salt makes it have a texture close to that of sea salt. The grains of the salt start out with a coarse texture, similar to that of sand, and get further refined until the surface has a fine, grainy texture. Kosher salt's greatest strength is its ability to absorb trace minerals from seawater. Unlike regular table salt, seawater has very little residual calcium and magnesium. The trace mineral content of seawater is essential for the health of human beings. The crystals of kosher salt are formed from the magnesium and calcium mineral deposits that are naturally found in seawater. As time passes and weather conditions change, these crystals grow and move from seawater to land down into the fresh water. This constant movement of these salts is what makes them appear to have a fine grains when touched.

Sodium chloride is the main component of kosher salt, and the amount of sodium contained in any particular type of kosher salt will vary from source to source. As stated above, this natural mineral content can vary significantly. In addition, the amount of chloride that is present in any particular type of kosher salt can change because it is possible to add other materials to the salt itself such as potassium chloride. These additional elements increase the amount of sodium chloride contained per unit of kosher salt, but they do not alter the essential nature of kosher salt.

Kosher salt has become increasingly popular over the past few years, especially as its usage as a table salt has expanded beyond traditional uses. This wide acceptance has lead to kosher salt being used as a topping for pizza, hamburgers, hot dogs, various types of seafood, stews, and even in some types of alcoholic beverages. The fact that kosher salt adds a very flavorful boost to food is not a mere byproduct of its general composition. It actually comes from makon gold, which is the fine metal that forms the base of all natural kosher salt.
