Black truffles are produced by a type of sugary fungus. A truffle, which can also be called a sugary mushroom, is a unique fruiting body of an ascomycanthous fungus, primarily one of the classifications of the genus Ascomycota. In addition to Ascomycota, several other genera of ascomycetes are also classed as truffles, such as Geopora, Peziza, Choiromyces, Leucangium and more than a hundred others. They are commonly found on trees in the Eastern part of North America, from the USA and Canada, to Argentina and in South America.

The name 'truffle' comes from the color of their outer coating, which is darker than that of most other fungi. Although this coloring is generally caused by the presence of sulfur compounds, they may also contain other substances. In order to obtain the black color, as well as the characteristic smell, the fungi are treated with either salt or unrefined sea salt (also called nacre). While salts are often much sodium chloride, as this is what is used to produce commercially processed sea salt, unrefined sea salt has much less sodium. This is why black truffle salt is also referred to as black salt.

There are several types of truffles, although they all derive from the same source. All belong to the Ascomycota fungi, a group of fungi which normally create mushrooms. Unlike other fungi, however, this particular group tends to use organic substances as food. Many kinds of these organisms are considered to be carcinogenic, so the production of black truffle salt is limited to very specific quantities.

The black truffle salt has several varieties. In the United States, there is farmed black truffle salt, harvested from the Asconycota moss found on the mushrooms. Fresh mushrooms are not used, since they quickly lose their freshness and begin to lose their color. This type of salt can also be used in place of table salt; however, it is much less common. Another variety, which is nearly identical in appearance to the wild, is called black truffle nacre and is often used in gourmet cooking.

Another variety of black truffle salt is called Cajun salt and is made by black-eyed peas, simmered onions, garlic, spices, a little bit of salt and some water. It is available at gourmet grocery stores but it can also be purchased online. This type of salt produces a distinctive flavor in cooked dishes; it is best mixed with other spices or a bit of water to enhance the flavor. It can be sprinkled on top of scrambled eggs, or on top of vegetables or cooked meats.

The third variety of truffle salt is a relative newcomer to the world of cooking. This new salt was developed in France in the 1970s, and was first known as "pommes frites" or "frites de pommes." In the United States, the dish became known as "churros" and soon, it went by the name "chocolate truffles." It is very different from the black truffle salt in its preparation. While both spices are applied directly to the food, the chocolate truffle salt goes under an oven, while the black variety bakes in the oven.

Truffle oil, which comes from the black truffle salt, is a very popular addition to many savory dishes, like omelets, scrambled eggs, vegetable dishes and shepherd's pie. The oil is mixed with egg yolks, milk and seasonings, before being added to the food. After the food is cooked, the mixture thickens, coats the food and makes it easier to cut. It also thins the whites, so that they don't burn. The result is an earthen gray color that bonds better with foods than the traditional brown color of most seasonings.
