Kosher Salt and Cooking
One type of natural salt that stands out among all others for its varied history and utility more so than almost any other salt is kosher salt. This unique form of organic salt has grown in recent years, so much so that like the rest of us, like to describe its properties, functions, and differences from the other kinds of organic salts. For instance, salt granules are created by passing fine crystals over hot boiling water to convert it into fine particles of sodium chloride. The resulting solution is then passed through a strainer to remove the tiny bits of crystalline structure, leaving behind the fine dust that is kosher salt itself. The crystals used in this process are all natural and do not contain any chemicals. In fact, even the process of the creation of the salt crystal itself, using natural materials, is more environmentally sound than other industrial methods.

Another noticeable difference between kosher salt and table salt is the texture. Since the coarse grains tend to be harder and heavier, they are said to have a more coarse texture; the same goes for the fine kosher salt, which has a more slippery texture. There are many different opinions about the texture, with some people saying that the rough texture creates more flavors and other people saying that it destroys the natural balance of the seasoning. Some people also feel that this texture makes it more difficult to hold onto the salt, as they have to use two hands just to hold on to a teaspoonful of kosher salt (which is not true, since kosher salt can be held easily without both hands).
