THE 10 STAGES OF ROASTING COFFEE


Expert roasters have determined the ten stages of roast beans can (but not necessarily should) be through. The level at which you will depend on your preference:



The green color: The beans remain their natural green color as they begin to heat.

Full City Roast: Beyond the boundaries that are offered by City Plus is the Full City that is a dark roast that pushes beans to the verge of cracking for the second time.


Second Crack (Full City Plus Roast): The beans undergo another, much more violent cracking, and then enter Full City Plus. This roast can reveal more layers of intenseness to the taste.


Black Roast (French Roast): The smoke becomes spicy, the sugars will consume as much as they can with out ruining the flavor of the beans, then the beans' overall structure will be destroyed. This is the maximum limit of roasting within the boundaries of good flavor.
