As for what hip-hop, if you want more of a traditional hip-hop sense, Wu Tang Clan is the first name you'll probably hear of.
For Jazz Rap an early starter of that would be A Tribe Called Quest. That being said, recently Flying Lotus has been doing very well for a Jazz Fusion with hip-hop and even IDM.
Another recommendable classic that's great for people new to the scene is Madvillain's "Madvillainy". And if you want to try instrumental hip-hop, DJ Shadow's "Endtroducing" is a great example.
If you perhaps want more of a taster though, without going fully into hip-hop territory, there's a young, instrumental jazz fusion /hip-hop band called BADBADNOTGOOD who's album "BBNG2" is one of my all time favourites.
If you want to get into pop's take on hip-hop, Kanye is easily the best bet; like him or hate him, the guy's got good production skills.
Other more noticeable modern names that I'd recommend as some of my favourites are Kendrick Lamar (who was rapping over this), Aesop Rock (who is basically hip-hop's Shakespeare when it comes to lyricism) and Run The Jewels.
Finally, if you feel like REALLY going out there and trying some of the more experimental stuff (because that was what really hooked my interest) you can try Death Grips (incredibly strong presence and unique songwriting) and Clipping. (made two albums so far, the first was mainly built on static and harsh noise, and the second just has this huge wave of varying beats and instrumentation.
