- Functions: cell membranes & apart of bile

- Multiple ring structure
- Plant sterols: Not well absorbed
- Block absorption of dietary cholesterol
- Cholesterol - Animals
- Found in butter, egg yolks, milk, meats
- In cell membranes to keep membrane fluid
- Hormones
