Prep time: 35 minutes but you have to wait 2 hours or so for the dough to rise
Cook time: between 15 and 20 minutes
DOUGH
1/2 cup of milk (I used rice milk and it's perfect)
2 teaspoons of yeast (do you have a brand called Fleischmann's?)
1 3/4 cup of flour
1/4 cup of sugar (I use a mix of stevia and maltodextrin, 4 teaspoons)
1 big egg
2 tablespoons of melted butter
RASPBERRY FILLING
1 cup of raspberries
1/4 cup of maple syrup
1 teaspoon of corn starch in a tablespoon of water
STEPS
- Pour the yeast in the warm milk and keep it for 10 minutes
- Put the flour in a bowl, add the sugar and mix. If you prefer, you can use a mixer to mix the dough but it's no that hard by hand if you're used to it.
- Then in the milk and yeast mix, add the egg and the butter. Mix.
- Add the milk/yeast/egg/butter mix to the flour/sugar mix. Mix.
- One you have a good dough, let it rise in a covered bowl for around 2 hours
- In a small pan, mix the raspberries and the maple syrup (medium heat) for 5 minutes then add the corn starch mix to thicken the filling
- Spread the dough (must be around 14 inches x 12 inches), spread the filling on it (leave 1 inch around), then roll. Now that's the difficult part. Be sure your filling is not too liquid or it'll be hell (it was hell for me, but I learned from that lol)
- Cut in 9 parts (or more if you want them smaller)
- Put them on a baking sheet. Beat an egg and brush it on the brioches
- Let them rise again for 30 minutes
- Preheat the oven 375°F then bake for 15 to 20 minutes
