The week at night while Marion is repairing them the toys attack Jeremy, which is why they don't suspect Marion about anything. The souls are stronger then the animatronics so when they really want to they can take control by force.
The animatronics can have actual conversations with the souls. The souls can get mentally exhausted and go to sleep.
