500g Schweinenuss
2 Esslöffel Tomatenmark
ca. 200ml Rotwein oder Bier
2-3 Schalotten
3 Knoblauchzehen
Wasser
Salz
Paprikapulver
1-2 Esslöffel Gulaschcreme
2 gewürfelte Tomaten
1 Esslöffel Gemüse- oder Rinderbrühe
(Kein Muss, Sauerkraut)
Rinderbrust und Schweinenuss in Würfel schneiden. (Vorher das Fett was zuviel ist abschneiden. Umso größer die Würfel, umso länger muss der Gulasch köcheln.) Das Fleisch in einen Topf anbraten wie weit man will, dann das Tomatenmark zu dem Fleisch geben und mitanbraten. Rotwein oder Bier mit dazugeben und solange köcheln lassen bis die Flüssigkeit fast verschwunden ist. Wasser aufgiessen bis das Fleisch bedeckt ist, geschälte ganze Schalotten, geschälte leicht angedrückte Knoblauchzehen, Salz, Paprikapulver, Brühe, Gulaschcreme und die gewürfelten Tomaten mitdazugeben. Das ganze dann köcheln lassen und ab und zu mal kosten und nachwürzen. Falls das Fleisch noch nicht zart genug ist, aber die Flüssigkeit fast seinen sollte, wieder mit Wasser und einem Schuss Rotwein/Bier auffüllen. Das ganze muss 2-3 Stunden köcheln sonst wird das nix. Umso länger desto besser. Tipp: 1 Stunde vor Ende noch Sauerkraut dazugeben (Menge nach belieben), macht das zu Szegediner Gulasch.
