Hipertonik bir ortama konan bir bitki hücresinin dışa doğru ozmosla vakuolündeki hücre özsuyundan bir miktar kaybederek protoplazma kütlesinin hücre çeperinden ayrılmasına plazmoliz denir. Uzun süre bu şekilde kalan hücrede sitoplâzma enzimleri görev yapamaz. Madde alışverişi durur ve hücre ölür. Plazmoliz durumundaki hücrenin kofulları küçülür.
Deplazmoliz
Plazmoliz olmuş bir hücre saf su içerisine bırakılırsa, bir süre sonra dış ortamdaki su molekülleri koful içerisine girmeye başlar ve hücre eski haline döner bu olaya deplazmoliz denir.
Turgor Basıncı
Hücre içerisindeki su moleküllerinin hücre zarına yaptığı basınçtır. Hücreye giren su miktarı arttıkça hücrenin turgor basıncı da artar Hayvan hücreleri bu yüksek basınca dayanamaz, parçalanır. Bitki hücrelerinde selüloz hücre duvarı olduğundan turgor basıncından, hayvan hücrelerine göre daha az etkilenirler.
Ozmotik Basınç
Belirli bir yoğunluğu olan her çözeltinin saf su ile ilişkiye geçtiğinde, ilişkiye geçtiği saf suyu emebilmesi bakımından aktif bir değeri vardır. Bu değere o çözeltinin ozmotik değeri denir. Ozmozis olayları sırasında bizzat iş gören bu ozmotik değere ozmotik basınç denir. Ozmotik basıncı artan hücre bulunduğu ortamdan su alma eğilimindedir.
Ozmotik basınç turgor basıncı ile ters orantılıdır. Emme kuvveti turgor basıncı ile ters orantılıdır. Ozmotik denge halindeki hücrede sindirim olursa su alır, sentez olursa su verir. Turgor basıncı, ozmotik basınca eşitlenirse, emme kuvveti sıfır olur. Emme kuvveti ozmotik basınç ile turgor basıncı arasındaki farktır.
