La gastronomía colombiana viene influenciada por las distintas culturas que llegaron al país en la época de la conquista (XVII Y XVII), culturas como las indígenas, españolas y africanas. Después del siglo XIX y XX llegaron los franceses e ingleses.
La variación en los platos y las influencias en las mesas colombianas dependen de la zona y región de la que provengan así como los recursos naturales que dispongan ademas de los distintos climas que se dan en este hermoso país tropical.
En Colombia existe una diversidad de regiones cada una con características especiales y costumbres culinarias propias. Entre ellas esta: la Caribe, pacífico, orinoquía, amazonas, andina e insular. Sin embargo, existen platos con ingredientes compartidos pero preparados a su manera en cada provincia.
