Ethiopia is often regarded as the origin of coffee. According to legend, a goat herder named Kaldi noticed that his flock was more energetic after eating red berries that grew on a plant close to his home. He tried the berries himself and noticed they had a significant effect on his energy levels. The herder shared the berry with his family, and this is how coffee was first consumed.

In the Yirgacheffe area of Sidamo, Ethiopia, coffee is usually "washed" or processed wet. This helps to eliminate bitter taste and to create an appealing, fresh taste. During the mid-2000s, global coffee prices soared to levels that were too high for many farmers across the world, including in Ethiopia. However the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU) was successful in helping the farmers stay in business through their fair trade initiatives and empowerment to bargain with the market. This led to the development of a new breed of single-origin Ethiopian coffees that are fruity which are known as "new naturals". Today, the world enjoys the distinctive fresh and floral flavor of the Yirgacheffe beans.

The seeds were later transferred to CATIE in Costa Rica, and finally to Panama by the late Francisco Serracin, known as Don Pachi. The Peterson family experimented with it at their Hacienda Esmeralda Farm and found that it produced flavors with balance and smoothness.

Geisha is more than an excellent coffee; it has a significant impact on the communities that grow it. It allows farmers to invest their profits into improving farming practices and processes. This improves the quality of all coffee varieties that they grow.

Yet, many common coffee lovers refuse to give it a try due to the cost. It's a shame, because Geisha coffee is definitely worth the price. Do yourself a favor and get some.

The history behind this coffee is apocryphal. During the British Raj period, large wooden ships were used to transport raw coffee to Europe. While on the journey humidity and wind caused the beans to naturally dry, resulting in a pale off white color. When they arrived in Europe they were discovered to have a distinctive and highly desirable flavor profile.

Monsooning is a unique and distinctive method of processing coffee that is still used today in Keezhanthoor. This hamlet with a high-end ambiance nestled in the Western Ghats is surrounded by small traditional tribal farmers who are devoted to delivering the highest quality beans. They produce a full-bodied, aromatic, smooth coffee that has notes of baker's cocoa, syrupy sweetness and a mild vanilla.

This coffee is ideal for espresso or cafe crème. It can be enjoyed alone or in combination with other coffees that are fruitier. Pour-overs, like in the Bialetti Moka Pot, are also popular. Due to its lowered acidity Monsooned Malabar is able to withstand heat too.
